Grilled Oysters

06/04/2025|by Jason Klein

This Grilled Oysters recipe isn’t just for seafood lovers—it’s a bold, flavorful addition to your outdoor cooking lineup. Crafted exclusively for TrueFlame by Chef Johan Magnusson of Big Swede BBQ, this dish is all about decadent, buttery indulgence balanced with fresh herbs, zesty citrus, and a savory touch of smoke from your TrueFlame grill. Whether you’re hosting guests or treating yourself, these oysters cook fast, plate beautifully, and pack more flavor than their size suggests.

Chef Johan blends softened butter with garlic, lemon, basil, and parmesan, finishing it with his signature herb rub for depth. This compound butter melts into the oyster shell, soaking into the meat and mingling with the briny oyster liquor for a bite that's layered and satisfying. Shucked fresh and grilled over a steady heat, the oysters reach their peak in minutes—just enough time for the butter to bubble and the cheese to melt into golden, garlicky perfection.

Serve them hot in a bed of sea salt to keep them steady and showcase their presentation. These oysters work equally well as a starter or centerpiece and will quickly become one of your favorite grill-day bites.

Makes 12 oysters

Grilled Oysters Ingredients

  • 12 Large Oysters
  • 8 Tbs Butter
  • 1 Tbs Big Swede BBQ Badass Veggie Boost or your favorite herb rub
  • 1/4 cup Basil Leaves
  • 1/2 cup Parmesan Cheese, grated
  • 1 Tbs Lemon Juice
  • 1/2 Lemon, zested
  • 2 Garlic Cloves, minced

Grilled Oysters Directions

  1. Pre-heat your TrueFlame grill by igniting all main burners. Then, close the hood and allow the grill to heat for 10 to 15 minutes; the hood thermometer should reach approximately 450°F. Turn the knobs to LOW.
  2. Let the butter sit at room temperature until soften. Add the rub, basil, parmesan cheese, lemon juice, zest, and garlic to the butter. Mix thoroughly and set aside.
  3. Line a rimmed baking sheet with heavy-duty aluminum foil, crinkling it up to create deep creases. Shuck the oysters, discard the top shells, and place them on a foil-lined baking sheet. Use the foil to keep them upright, preventing oyster juices from spilling out.
  4. Using two spoons, place a tablespoon of compound butter on top of each oyster and place the baking sheet in the TrueFlame grill. Close the lid and cook until the butter is melted and the liquid is bubbling about 3 minutes. When ready, remove it from the grill.
  5. Pour some coarse sea salt into a serving tray and place the oyster on top of the salt. This will help keep the oysters upright and straight when serving, preventing the liquid inside from spilling.
  6. Serve immediately.
