Grilled Lamb Chops

10/01/2025|by Jason Klein

Grilled Lamb Chops make a bold statement on the plate, combining rich flavor with an irresistible smoky edge. Chef Johan Magnusson of Big Swede BBQ has created a recipe that turns this classic cut into a centerpiece worthy of any gathering. These chops showcase how simple ingredients can deliver depth and balance when prepared over the fire by pairing quality lamb with a flavorful rub and fresh herbs.

The high heat of the grill locks in juices while building a caramelized crust that contrasts beautifully with the tender interior. Fresh lemon squeezed just before serving brightens each bite, cutting through the meat's natural fattiness. A hint of herb smoke adds a rustic note that elevates the overall character of the dish without overpowering it. The result is a combination of savory, smoky, and citrus flavors that combine perfectly for intimate dinners and larger celebrations.

This recipe demonstrates the power of precision grilling—short cooking times, careful handling of flare-ups, and a focus on seasoning allow the lamb to shine. It’s an ideal example of how fire and flavor can work together to create a dish that feels both comforting and refined.

Serves 6-8

Grilled Lamb Chops Ingredients

  • 2 racks of Lamb Rib Loin
  • Big Swede BBQ Badass Beef Boost or your favorite steak rub
  • 1 Lemon
  • Mixed fresh herbs (thyme, rosemary, oregano)

Grilled Lamb Chops Directions

  1. Pre-heat your TrueFlame grill by igniting all main burners. Then, close the hood and let the grill heat for 10 to 15 minutes; the hood thermometer should reach approximately 450°F. Turn off all the knobs except one.
  2. Trim the extra fat from the lamb racks, then slice each rack into chops. Season each lamb chop with the Big Swede BBQ Badass Beef Boost or your favorite steak rub, and let it sit at room temperature for 60 minutes to allow the rub to adhere to the lamb.
  3. Add some herbs soaked in water to the Smoker Box and place over the hot grates.
  4. Place the lamb chops on the grill and grill for 3-4 minutes. Then flip over and continue grilling until cooked through, with an inner temperature of 130°. Lamb chops are fatty cuts, so move them around on the grill to avoid flare-ups that might char the meat and make it taste bitter.
  5. When almost ready, slice the lemon in half and squeeze some juice on the chops. Remove from the grill. Let the grilled lamb chops rest for 5 minutes, then serve immediately.
