The prep is clean and straightforward. Fresh mushrooms are tossed with olive oil, garlic, lemon juice, salt, and pepper and then layered with chopped rosemary, thyme, and sage for depth. Once mixed, the seasoned mushrooms are spread over a soaked cedar plank, allowing them to absorb natural wood smoke without drying out or charring.
