Big Swede BBQ’s Cedar Smoked Mushrooms bring an earthy twist to the grill that’s anything but ordinary. Created by Chef Johan Magnusson in collaboration with TrueFlame, this exclusive recipe uses the aromatic power of cedar and a robust herb blend to turn simple mushrooms into a standout dish.

The prep is clean and straightforward. Fresh mushrooms are tossed with olive oil, garlic, lemon juice, salt, and pepper and then layered with chopped rosemary, thyme, and sage for depth. Big Swede BBQ's Badass Veggie Boost rounds out the flavor with a signature herbal kick. Once mixed, the seasoned mushrooms are spread over a soaked cedar plank, allowing them to absorb natural wood smoke without drying out or charring.

Grilling over indirect heat gives the mushrooms time to soften and take on color, while the plank slowly releases smoke. As they finish, the edges turn golden, the aroma intensifies, and a final squeeze of lemon adds just enough brightness to balance the rich wood and herbs. Served hot off the grill, they pair well with grilled meats—or shine on their own as a satisfying plant-forward option.

Serves 2-4

Cedar Smoked Mushrooms Ingredients

  • 1 lb Mushrooms sliced
  • 1/2 Tbs Lemon Juice
  • 6 Tbs Olive Oil
  • 1/2 tsp Black Pepper
  • 1 tsp Thyme, chopped
  • 1/2 tsp Rosemary, chopped
  • 1/2 tsp Sage, chopped
  • 1/2 tsp Salt
  • 2 tsp Garlic
  • 1 1/2 Tbs Big Swede BBQ Badass Veggie Boost or favorite herb rub
  • 1 Lemon
  • 1 large Cedar BBQ plank

Cedar Smoked Mushrooms Directions

  1. Preheat your TrueFlame grill by igniting all main burners. Then close the hood and allow the grill to heat for 10 to 15 minutes; the hood thermometer should reach approximately 450°F. Turn off all the knobs except one.
  2. Soak the cedar plank in water for 1-2 hours or until completely soaked through.
  3. Combine the mushrooms, lemon juice, olive oil, garlic, salt, pepper, and chopped herbs in a bowl. Toss until completely coated. Add the Big Swede BBQ Badass Veggie Boost or your favorite herb seasoning and toss until mixed.
  4. Place the mushrooms on the cedar plank, spreading them to cover about 95% of the surface. Then, place the cedar plank with mushrooms on the grates.
  5. Grill the cedar plank for 12-15 minutes, or until the mushroom edges are golden and cooked through. Have a water spritz bottle ready for any flare-ups. The cedar plank should smoke but not light on fire.
  6. Remove the cedar plank from the grill when the mushrooms are cooked through.
  7. Squeeze lemon juice on top of the mushrooms and serve immediately.
